Dengaku Miso

Ingredients
  • 17.5 oz. of Saikyo Miso, 5.25 oz. of sweetened sake, 2 egg yolks
  • -1. Mix all ingredients in a large pot and mix on low.
  • -2. Mix for about 15 minutes until it is as hard as regular Saikyo Miso. Turn off the heat and let it cool down.

Boiled Pork Salad Roll with Sesame Miso Dip

Ingredients
  • -10.5 oz. sliced pork
  • -1 bundle Kaiware radish
  • -1 piece Japanese cucumber
  • -1/6 piece carrot
  • -3 teaspoons Dengaku miso
  • -1 teaspoon vinegar
  • -2 teaspoons sesame
  • -1/2 teaspoon mustard
  • -soup stock to taste
  • -13.6 fl. oz. water
  • -0.35 oz. Chinese soup stock
Preparation
  • -1. Parboil sliced pork piece by piece using parboil soup stock. Lay on sheets to cool.
  • -2. Cut off the root of the Kaiware radish. Wash with water, and cut in 1.4 inch-long slices.
  • -3. Wash with water. Remove the water and cut cucumber, carrot, and onion in 1.4 inch-long slices.
  • -4. Roll vegetables with pork meat.
  • -5. Add seasoning to make sesame miso.
  • -6. Serve pork and vegetable rolls and sesame miso.

Minced Chicken with Dengaku Miso

Ingredients
  • -10.5 oz. minced chicken
  • -1/4 piece Welsh onion
  • -0.52 oz. ginger
  • -1 egg (as needed)
  • -1.7 fl. oz. milk
  • -3 teaspoons bread crumbs
  • -1 teaspoon soy sauce
  • -4 teaspoons Dengaku miso
  • -1 teaspoon soy sauce
  • -red pepper to taste
  • -soup stock to taste
Preparation
  • -1. Preparation: Mince welsh onion and ginger.
  • -2. Soak bread crumbs in milk.
  • -3. Add onions, ginger, bread crumbs, egg, and soy sauce to minced chicken, and mix with hands.
  • -4. Arrange the mixture into bite-sized pieces and roast in a pan.
  • -5. Add seasoning and boil in a pot.
  • -6. Spread seasoning on roasted pieces, and serve.
